Sea food with ouzo and pasta

1spoun chives
½ cup olive oil
200 gr. shrimps 200 gr. crawfish
200 γρ. mussels
2 big tomatoes cut in cubes
2 daphni leaves
1 spoun of parsley (cut in small pieces)
salt & pepper
1 σφηνάκι ούζο
500 gr. pasta (rigatoni, pennes e.t.c.)

Worm the oil in a middle temperature  in a dip frying pan and saute the chines. We add the sea food (that are washed and cleaned also). We saute them for 2-3 minutes and we add ouzo. Then we add tomatoes and the rest of the aromatic essences. As soon as they start boil, we decrease the temperature and we cook the food for 10-12 minutes. 

Boil the pasta in salty water, we strain them, stair with some oil and serve with the sea food..

 

Fillet with mushrooms and ouzo

Ingredients(4 people)
4 veal fillets
1 can of mushrooms
2 cloves of garlic
1 glass of ouzo (wine glass)
1 skein of parsley cut in small pieces
4 spouns of olive olive
Salt and pepper

Procedure
Sauté in dip fry pan the garlic with the olive oil and the mushrooms. We sauté them until become very soft.
In an other fray pan we grill the fillets for 3 minutes or 5 according to what we want.
We add the fillets in the pan with the mushrooms and we pour the ouzo. As soon as the ouzo evaporates, add salt and pepper.

Secret
If you wish a fine smell put some rosemary, cooked in the fry pan with the fillets. If you don't like fillets you can use chicken or stakes.

 

Shrimps with vegetables and ouzo

Indredients
5 shrimps number 5
100 gr marrow
100 gr carroys
50 ml milk cream
30 ml ouzo
30 ml olive oil
αλάτι και πιπέρι

Procedure
Rub the carrots and the marrow, Wash and clean the sea food. We sauté the sea food for 3 minutes in the boiling olive oil. Add the vegetables, sauté for 2 more minutes and pour ouzo (make it flambé).
As soon as ouzo evaporates, add the milk cream, salt and pepper. When the sauce becomes thicker is ready.  

 

Salmon with leeks and chives in the oven

Ingredients
250 gr. salmon
600 gr. leeks
2 tomatoes
1 onion
chives
1 short drink of ouzo
salt, pepper
olive oil

Procedure
We first cut in small pieces the tomatoes, the onion and the leeks.
Sauté the salmon fillets. In an other pan sauté the chives, the onion and the leeks. Finally we add tomatoes and stir. Pour ouzo and add salt and pepper.
We place all the ingredients in a baking pan, put the salmon on the top and bake for half an hour in 180 degrees centigrade.
